Poppy Seed Chicken

It's BAD...but not bad, bad, bad good.  Make sense?  What I really mean to say, is that it's so good, it's bad.  Let me rephrase..YUMMY.  If I made this often, it would not last long.  I found the link to this recipe from Living, Laughing, and Loving on the Menu Monday post I link up with.  When I looked at Renee's family's response, I new I had to give poppy seed chicken from the Sisters' Stuff a try.  I took the general idea but made a few add ins based on what I had in my fridge that needed to get used up.

3 chicken chicken breasts, boiled and cubed
1 can of cream of chicken soup
1 cup sour cream
2 cups of chopped, cooked broccoli
1 1/2 cups cooked rice
approximately 10-12 Ritz crackers
3 Tablespoons melted butter
1 Tablespoon poppy seeds

Put chicken, rice, and broccoli into a casserole dish.  Heat soup and sour cream together but not to boiling.  Pour over the chicken mixture.  Mix melted butter, poppy seeds and crackers together.  Sprinkle on top of the casserole.  Bake uncovered at 350 degrees for 30 minutes.
