crockpot potato and ham casserole

It's another hot one out there today and I had no intentions on heating up the house with the oven.  I had some ham that needed to be used us since I ended up not using it last weekend for the brunch, I went with a sausage egg bake instead.  We've eaten the ham in eggs and on salads but I decided it was time to finish up the ham, since I'm not really sure of the life span once it's been opened.  Plus my carrots were starting to look a little questionable but still had enough spunk in them for this meal.  I've made similar dishes in the crockpot before, it works great for using leftover ham from Easter, Christmas, lunch meat or ham when it's on sale.  I'm pretty sure this meal is pretty cheap but since I don't have the skills like Nickeletta with the spread sheets, I can only assume.  Although it would be pretty cool to know exactly how much each meal cost our family to make.  I know this is a hit because my 4 year old she would love me forever if I made this again.  Which is a compliment because it seems she can be a pretty picky eater these days.



4 potatoes, roughly peeled and sliced thin
1 onion, sliced thin
4 carrots, peeled and sliced thin
1 cup chopped ham
1 can 98% fat free cream of broccoli soup
1 cup of milk
1/2 cup shredded cheddar cheese
salt and pepper to taste

Spray the well of your crockpot with cooking spray.  Place about half potatoes in the crockpot, sprinkle with salt and pepper, layer half onion, half carrots, and half ham.  Repeat the layers.  In a separate bowl mix the soup and milk together.  Pour over the potato layers.  Set crockpot on low for about 8 hours.  About half hour before serving, sprinkle with cheese and place lid back on so cheese will melt.
