Easy Turkey Casserole

Again it's another easy recipe.  Have you noticed I don't prepare super difficult recipes?  Yep, it's true I love easy recipes.  They usually tast pretty darn good, too.  Try this one out and let me know! 

1 pound ground turkey
1 large onion, chopped
5-6 medium potatoes, peeled and thinly sliced
1 cup beef broth
1 can brocoli cheese soup
1 bag of frozen mixed vegtables or leftover veggies
salt and pepper to taste

Preheat oven to 350.  In a skillet brown turkey with onions.  Layer the thinly sliced potatoes in the bottom of a 9 x 11 pan.  Sprinkle potatoes with salt and pepper.  Spread the vegtables over the potatoes.  Then spread the ground turkey on top.  Mix the broth and cheese soup together.  Pour evenly over the top of the casserole.  Cover with aluminum foil and bake for about 45 minutes or until heated through.
